The Golden Apple was 1 of the most popular Black Market Items on Howrse. It costs 1 pass, and you can choose a rare unique coat for your horse. This only has a 1-time affect, and once you choose the coat, you won't be able to change it again, unless you buy another 1. It also gives the following bonuses:
Stamina + 5
Speed + 5
Dressage + 5
Gallop +5
Trot + 5
Jumping + 5
If you use a Golden Apple, and then turn your horse into a Pegasus, it will keep the Golden Apple coat (but it won't sprout wings). If you want a Pegasus coat, you can get a new Golden Apples, and you'll be able to choose Pegasus coats. Some Golden Apple coats are not compatible with Helios' Ray, meaning if you have that type of coat, you can't choose a Helios' Ray background.
